Cherry Scones


Let me start by saying this...

I don't like cherries.

There, it's out there now.

But, I really don't think it's my fault.

I blame cough syrup manufacturers.

Cherry-flavored medicine was one of the WORST ideas.

Although, I was very fond of playing Hi-Ho-Cherry-O upstairs at my grandparent's place.
Anyone else grow up playing that game?

Well, now that it's out there, I will tell you that my husband loves them.
A sweet friend brought us a bag that she got at a fruit stand and, I kid you not, he'd have eaten the whole bag (if his stomach wouldn't have argued with him about it later).

TMI?

ANYWAY, one of my favorite memories from my childhood was making scones with my dad. Our family recipe has worked for Chocolate Chip Scones, Blueberry Cinnamon Scones, Cinnamon Raisin Scones, and Cranberry Scones (sometimes with White Chocolate Chips, too - YUM!).

So, I thought I'd see what would happen if I tried Cherry Scones.

The beauty of this recipe is that you can add ANYTHING. I think the cherry scones would be great with dark chocolate chips added in but since I didn't have any, I used white chocolate chips.

Here's how it works:

Rinse off some fresh cherries.

Chop and pit the cherries until you have a cup and a half of chopped cherries. (At this point, I set them out on a paper towel to dry a little bit... it'll help later)

Place flour, sugar, brown sugar, salt, baking powder and cream of tarter into a mixing bowl or the bowl of a stand mixer. Stir to combine.

If you're not familiar with cream of tartar, here's a picture. (You find it in the spice aisle. A certain husband, who shall remain nameless, might have thought that I was asking for a kind of cream and spent some time in the dairy section. Oops.)

Dice 2 sticks of butter and add to the flour mix.

Now, the way we used to do this when I was a kid was by using a pastry blender and combining it by hand. However, I use my fancy stand mixer with the paddle attachment to blend it all together.  It should resemble small crumbs.

Beat one egg and one egg yolk and add that to 2 tsp of vanilla and 1- 1 1/3 C half & half. (This is where it gets tricky - Use 1 C for fruit scones and 1 1/3 C for scones with things like raisins, chocolate chips, etc - or if you live in a drier climate.) Set this aside.

Add the cherries and cinnamon (and I might have added some white chocolate chips, too) to the dry ingredients and gently fold together. (I only use the paddle attachment on my mixer when making scones with hard ingredients like chocolate chips. For the fruit scones, use a spatula and be gentle!)

Make a little hole in the middle of the dry ingredients to pour the wet ingredients into.

Gently fold together until mixed... It doesn't have to be super well mixed. And, having a few little chunks of butter is ok. Scones are very forgiving.

Cover the dough and put it in the fridge overnight (or if you make the dough in the morning, you can bake them that night). DON'T SKIP THIS STEP. It makes the next part WAY easier and you'll want the butter in the dough to be chilled again.

When the dough is fully chilled, turn 1/4 of the dough out onto a floured surface. There's no kneading necessary. Sprinkle a little flour on the top and gently pat into a circle until the dough is between 1/2 and inch and 3/4 of an inch thick.

Use a large knife to cut the circle into 8 triangles.

I use a spatula to lift them onto a parchment lined cookie sheet. (Let's hear it for parchment paper! WHY DIDN'T I START USING THIS STUFF A LONG TIME AGO?!)

In another tiny bowl, beat an egg with 3 tablespoons of water and lightly brush the tops of the scones with this egg wash.

Sprinkle on as much sugar as you're comfortable with. ;)

And, after being in a 425 degree oven for 13-15 minutes:

That, my friend, is a beautiful picture. A delicious, beautiful picture.

Serve them warm with a little butter melting over the top.

I often try to convince myself that these count as breakfast, when, let's face it, they are definitely a dessert... or snack... or anytime sort of yummy treat.

I did bring a few over to the friend who brought me the cherries and she gave me her seal of approval, so now I feel comfortable sharing the recipe with YOU!

***I live at a very high elevation, so to adapt this, I only use 3 tsp baking powder, I used 1 1/4 C half & half, and I did a slightly heaping cup of flour for the 4th cup of flour added.***

Processing... (and a FREE printable)

Fear used to come out in subtle ways...

Insecurity that would hold me back from trying new things or giving my all on the court = fear of failure.

Sticking to friends who already knew me because I was sure that new people wouldn't like me or find me cool enough = fear of rejection.

Not volunteering to help in situations where I may have been able to contribute something valuable = fear of disappointing others.

But, I've taken baby steps.
Running the marathon was a BIG deal for me because I had to put many fears aside in order to do it. I had feared that I wouldn't finish, that I'd look ridiculous, that I'd get injured and in doing so, disappoint all who came to cheer me on. But, mainly I feared proving all of my self-doubt right, that I would inevitably fail.

I didn't.

I certainly didn't have an outstanding finish time, but all things considered, I rocked that marathon.

In my life, I usually go one of two ways: either I let insecurities stop me from doing little things or I attack big things head on.

Things that were a big deal to me were things that I could somehow run at full steam.
On the other hand, if something could be considered small or not a big deal, I could justify brushing it off and not trying because it didn't really matter.

The problem with that was that I was getting myself into the habit of letting fear and insecurity win because I was getting used to giving up on lots of little things every day.

I know this sounds weird, but here's an example. I enjoyed singing on the worship team at our church of over a thousand people where I would be singing into a microphone or have solos, duets, whatever but the idea of being in the choir freaked me out. I don't know why... don't ask.

But, it feels like my fears are a lot more obvious now.

After everything with the Little Miss, I fear being pregnant again.

Since the accident, I've begun having panic attacks.
I've never had them before. They are paralyzing. 

Here's the thing, I got injured 2 weeks before my marathon and still ran it. I was told I was miscarrying my daughter and now she is an awesome 2 year old (yes, she has seizures, but so far they aren't hurting her). While driving our truck, I slid off a mountain cliff and rolled the truck down the side of the mountain and walked away. God has blessed me. That is not in question. He has VERY OBVIOUSLY ordained these situations and kept us safe through them.

My problem is that I can't figure it out.

Why didn't that injury stop me from running?
Why do so many women miscarry and my body went through everything that it should have during a miscarriage, but I have my daughter?
Why, when all of the emergency responders tell me that normally they are extracting a body from an accident like that, did I get to walk away scratch free?

I know it seems twisted to think that way, but I can't seem to wrap my mind around these things.

Isn't that the point?
To admit that we're human, that we haven't yet arrived, that we don't understand it all?

God knows I'm a work in progress.
He knows that sometimes I am weak.
Sometimes I give into temptation.
Sometimes I doubt, and fear, and fail.

And that's ok.
It's in these moments that He gets the opportunity to show up and remind me that He is sufficient, that He is all I need.

It's not easy to trust Him.
In fact, it's terrifying.

But that doesn't mean it's not worth it.

In The Lion, The Witch and the Wardrobe (the book, not the movie), Lucy and Mr. Beaver are talking about Aslan (who is of course a metaphor for God):

"Is he - quite safe?" - Susan
"Safe?... 'Course he isn't safe. But he's good. He's the King, I tell you." - Mr. Beaver

I need to wrap my brain around this. I'm not naive. I know life is going to be full of struggles and hardships, joy and pain, fun and challenges, happiness and grief.

So, I think it comes down to how I want to approach each of these situations.

God is going to let happen to us whatever He chooses. He will allow things that will contribute to His purposes and glory.

I need to decide if He and I are on the same team.

Will I embrace each difficult circumstance with a willingness to rejoice no matter what or will I stiffen up and put up my defenses because I don't want to go through it?

I need to rely on Him to even help me trust Him, to keep me focused on Him. When left to myself, I doubt and question and get distracted.

I want to focus on Him because at the end of my life I would rather say that even though I did not always understand the details of the storyline, God is still the best author.

Cheap, Quick and Easy DIY Thanksgiving Banner



My home needed a little something.

We live 2 1/2 hours from the nearest Target.

I'm pretty sure I'm about 4 hours from a Hobby Lobby... although I can't even tell you where one is located.

I couldn't just run out to find something new to add to my holiday decor. And, I have two little tornadoes that keep me plenty busy!

So, I can testify that this is super QUICK and EASY... it makes a great last minute project to add a little pop to your decor. 

Everything I used I previously had on hand.

Here you go:

Start by picking what you want it to say. I was torn between "give thanks" and "happy thanksgiving" - but since I've been striving to focus on what good is happening in our lives without wondering how all of our circumstances are going to work out, I settled on "give thanks." 

I'm choosing to praise the Lord in the midst of the unknown.

Anyway, then head to TemplateFrees.com and print out the letters you need.
I printed mine onto card stock and cut them out while sitting next to the tub as my kids bathed.
Multitasker. ;)



Then, I grabbed these paints that I had bought for another project.



I painted the letters while watching this during nap time (even though they weren't actually sleeping)...





Again, multitasking. ;)

Let 'em dry...



and hang em' up. (I used tiny clothespins and twine)



It's really that simple. (I put gold glitter on the yellow letters to give it a lil' something extra)  ;)

World's Okayest Mom & a FREE PRINTABLE

I found this picture one day while I was searching for designs I could draw on coffee mugs. (Thanks, Pinterest!)

I found it inspiring.

That is EXACTLY who I want to be.

I am fully ok with the fact that I will not be a perfect mom.
I will not pretend to be.

I try recipes that don't taste right. Sometimes I forget that there is a load in the wash (for a few days). My house isn't dusted or vacuumed or disinfected nearly enough. I yell at my kids and then feel really bad about it. Patience is a virtue I'm still working on. I have emotional outbursts more often than I care to admit. I don't spend enough time actually playing with my kids. More often than not, by the time 2pm rolls around, I'm more ready for their nap time than they are.

Right now as I type, my 3 year old is in minute 42 of fake crying in his room because he doesn't want to nap.

But, I'm taking baby steps.

"Progress. Just make progress. It's okay to have setbacks and the need for do-overs. It's okay to draw a line in the sand and start over again - and again. Just make sure you're moving the line forward. Move forward. Take baby steps, but at least take steps…"

I have only been at this "being a mom" thing for a little over 3 1/2 years. Sometimes on really challenging days, I have no idea how I'm going to get out of my "funk," as I call it. That's why it's good to remind myself that...

"I have a choice to have destructive thoughts or constructive thoughts right now. I can wallow in what's wrong and make things worse, or I can ask God for a better perspective to help me see good even when I don't feel good." I'm learning. I'm growing.

And, so are my kids.

In this moment, I'm hoping that by not giving in to the temptation to go talk to him about his fake crying, he'll start to grasp the fact that whining doesn't get my attention anymore.

As of two days ago, I announced to our 3 year old that my ears don't listen to whining. So far, so good. It actually allows me to not lose my patience. I simply remind him that I won't hear the whining. It's shocking how fast his words become intelligible.

Shocking.

Truth is, I want my kids to know that it's ok to make mistakes.

They see me do it e.v.e.r.y.d.a.y.

That's why even before they can understand it, we started apologizing to them when we do something that deserves an apology.

By the way, there are not too many things that are more humbling than apologizing to a 3 year old (especially when you are apologizing for doing adult versions of the tantrums that the 3 year old usually throws).

We want them to know that even mommy and daddy do things wrong sometimes. Sometimes mommy and daddy need to say they're sorry, too.

How can our children truly understand and experience grace if they never get to experience giving it?

(By the way, the little mister is FINALLY asleep)

Apologizing to our children opens up the chance to have meaningful conversations with them about how we sin and God forgives us. We show them how we pray and ask God to help us to show patience, kindness, respect and gentleness to one another. We demonstrate that in and of ourselves, we will fail, but with God's help, we can succeed.

So, I wrote something on the chalkboard in our kitchen for a while as a friendly reminder to myself. It says, 'Be the mom you want them to remember.'

The mom I want them to remember is humble, willing to admit that she's not a perfect mom, but she's depending on God to help her to be the mom they need. I want them to remember a gentle mom who gives grace when she can and discipline when necessary. I want them to remember me pushing them to do their best and knowing that I'll be there loving them regardless. I want them to remember that I am a work in progress, just like they are, and that we can be a team - pushing each other toward the people God wants us to be.


So, I designed this little printable for you. If you feel the same way, download it. Print it out and put it next to the coffee pot. Save it as your lock screen on your phone or tablet. Let it gently remind you through the day that it's ok to fail because kids need to know their parents aren't perfect either. Let it remind you that you don't want to be remembered as the perfect mom, but instead the mom that was demonstrating humility, love, grace, truth, gentleness, patience, repentance,… Let them remember the real you.
